Title: The Budtender as Psychophysicist: Fragrance and Flavor in the Emerging Market for Legal Cannabis
Abstract: This paper describes sensory issues being raised on the new frontier of legalized cannabis. These include the development of an olfactory lexicon, the role of terpenes and other volatiles, flavor and fragrance design across multiple product formats, and consumer perceptions and preferences.
Dr. Avery Gilbert’s bio
Dr. Avery N. Gilbert is a smell scientist, entrepreneur, and author. He is a Fellow of the Association for Psychological Science and a scientific pioneer in the area of human odor perception. Gilbert is a fragrance industry innovator who created a sensory psychology research group for a major international fragrance company and founded three olfactory-related startup companies. His latest venture is Headspace Sensory, LLC, a company engaged in the sensory analysis of cannabis aroma. Gilbert’s book What the Nose Knows: The Science of Scent in Everyday Life was a finalist for the Los Angeles Times Book Prize in Science & Technology, and short-listed for the Royal Society Science Book Prize. It has been translated into eight languages. In 2017 he published two short stories based on fictional scent expert Nick Zollicker.
Dr. Gilbert’s training in evolutionary biopsychology led him to academic research on odor perception. He graduated from the University of California at Berkeley, and holds an MA in biology and PhD in psychology from the University of Pennsylvania. He joined the faculty at the Monell Chemical Senses Center in Philadelphia, and while there co-authored the National Geographic Smell Survey—the largest participatory experiment of its kind. Gilbert left academia to create and lead the Sensory Psychology research group at Givaudan Roure Fragrances as a vice president. Gilbert runs Synesthetics, Inc., a consulting company that provides innovative, multisensory research design for the development and marketing of consumer products. He is also the founder and managing member of Headspace Sensory, LLC. Gilbert’s entrepreneurial experience includes his founding role at Cranial One Corporation and a stint at DigiScents, Inc.
Dr. Gilbert is a member of the Association for Psychological Science, the Association for Chemoreception Sciences, and the European Chemoreception Research Organization, and is on the advisory boards of Aromyx Corporation and the Institute for Art and Olfaction. He has published thirty scientific papers as well as numerous articles in newspapers and magazines. Gilbert’s work is regularly cited in the media. He has discussed the science of smell on national television and radio, including FOX, NPR, CNN, CBS and MSNBC, and at the World Science Festival. He has appeared in television commercials for Shiseido’s Ag DEO24 products in Japan. Gilbert blogs on the science and culture of smell at FirstNerve.com. He speaks frequently to professional groups and general audiences on current topics in odor perception.
